Ingredients
450g Russet Potatoes
2 tbsp Olive Oil
Salt & Pepper
4 tbsp Nutritional Yeast, divided
1 tsp Garlic Powder
1 Small Leek
450g Silken Tofu
1 tbsp Soy Sauce
1 tbsp Minced Garlic
1 tsp Smoked Paprika
1 tbsp Corn Starch
3 tbsp Hummus (can substitute with 1/4 cup of Raw Cashews)
1/2 tsp Dijon Mustard
2 tbsp Vegan Margarine
1 cup Vegan Bacon, diced
1/2 Onion, diced
Optional:
1/2 tbsp Vegan Breadcrumbs
Instructions
- Set oven to 400ºF (200ºC)
- Peel potatoes and cut in thin, even slices (use a mandoline, if available)
- In a large bowl, mix potatoes, olive oil, salt & pepper, 1 tbsp nutritional yeast and garlic powder – toss until all slices are well coated
- Lay potato slices on the bottom of a pie dish, starting with the largest ones from the center and slightly overlapping them – don’t forget to also cover the laterals (see recipe video for tips)
- Bake for 20 min
- Meanwhile, melt margarine in a saucepan and add your favourite kind of vegan bacon or sausage
- Cook for 3 min (or a bit longer, if you prefer it crispier), add onions and cook until it’s soft
- Add leek (finely sliced), cook for 3 min, stirring, and reserve
- In a food processor or blender, add all remaining ingredients (except breadcrumbs) and blend until a cream is formed
- Gently fold cooked bacon/onion/leek
- Remove potato crust from oven and reduce temperature to 350ºF (180ºC)
- Carefully fill in crust with the cream and smooth it
- If desired, sprinkle breadcrumbs for a crusty top
- Bake for another 45-50 min, until golden
- Let sit for at least 20 min before serving for filling to set

You can replace bacon with the same amount of vegan sausage.
