Ingredients
1 tbsp Olive Oil
1 small Yellow Onion
2 tbsp Yellow Curry Paste
1 tbsp Ginger paste
1 tbsp Thai Spice Mix
1 tbsp Garlic, minced
1 cup (90g) Carrots, diced
1 cup (100g) Cauliflower Florets
1 cup (100g) Broccoli Florets
1/3 cup (60g) Red Lentils
1 1/2 cup Vegetable Stock
3/4 cup Coconut Milk
2 tbsp Soy Sauce
1 tbsp Lime Juice
Salt and Pepper, to taste
To serve:
Jasmine or Basmati Rice
Fresh Basil Leaves
Instructions
- Heat a medium pot over medium-low heat
- Add Olive Oil and Onion, cook until softened
- Add Curry Paste, Ginger, Thai Spice mix, and Garlic
- Stir to mix well and toast until fragrant
- Add Carrots, Cauliflower and Broccoli
- Stir until well coated
- Add Lentils and stir well
- Add Vegetable Stock, stir well and increase heat to bring it to a simmer
- Cover with a lid and cook on medium-low heat for about 7-8 minutes
- When cooked, uncover, stir well and add Coconut Milk
- Stir until combined, then add Soy Sauce and Lime Juice
- Season with Salt and Pepper
- Simmer until reduced to the desired consistency, watching not to overcook
- Serve over Rice and decorate with Basil leaves
