Ingredients

Scale

1 tbsp Olive Oil

1 small Yellow Onion

2 tbsp Yellow Curry Paste

1 tbsp Ginger paste

1 tbsp Thai Spice Mix

1 tbsp Garlic, minced

1 cup (90g) Carrots, diced

1 cup (100g) Cauliflower Florets

1 cup (100g) Broccoli Florets

1/3 cup (60g) Red Lentils

1 1/2 cup Vegetable Stock

3/4 cup Coconut Milk

2 tbsp Soy Sauce

1 tbsp Lime Juice

Salt and Pepper, to taste

To serve:

Jasmine or Basmati Rice

Fresh Basil Leaves


Instructions

  1. Heat a medium pot over medium-low heat
  2. Add Olive Oil and Onion, cook until softened
  3. Add Curry Paste, Ginger, Thai Spice mix, and Garlic
  4. Stir to mix well and toast until fragrant
  5. Add Carrots, Cauliflower and Broccoli
  6. Stir until well coated
  7. Add Lentils and stir well
  8. Add Vegetable Stock, stir well and increase heat to bring it to a simmer
  9. Cover with a lid and cook on medium-low heat for about 7-8 minutes
  10. When cooked, uncover, stir well and add Coconut Milk
  11. Stir until combined, then add Soy Sauce and Lime Juice
  12. Season with Salt and Pepper
  13. Simmer until reduced to the desired consistency, watching not to overcook
  14. Serve over Rice and decorate with Basil leaves
