Quick Bread (No Yeast)

Ingredients

1 1/2 tbsp Lemon Juice or White Vinegar

1 1/2 cup Vegetable Milk

4 cups All-Purpose Flour, more to shape dough

2 tsp Baking Soda

2 tsp Salt

4 tbsp Vegan Margarine or Olive Oil, at room temperature

2 tbsp Sugar

Optional, to decorate

Dried Rosemary

Coarse Salt


Instructions

  1. Pour lemon juice in a measuring jug
  2. Fill with milk up to the 400ml (1 ¾ cup) mark
  3. Mix well and reserve
  4. Set oven to 400°f.
  5. Add flour, baking soda and salt to a large mixing bowl
  6. Whisk until well mixed
  7. Divide margarine in 3-5 chunks and add to a small, microwave-safe bowl
  8. Microwave margarine for 20 seconds (doesn’t need to melt completely) and let sit for a few seconds
  9. Add sugar to melted margarine and stir until dissolved
  10. Open a well in the middle of the flour mix and pour margarine/sugar mix in it
  11. Mix with a whisk or fork just until combined
  12. Equip a hand mixer with the dough hooks
  13. Add about 1/3 of the milk/lemon mix and start kneading on low until liquid is absorbed
  14. Slowly add remaining liquid, increasing the mixer power gradually, until well combined (see recipe video for reference)
  15. Scrape dough hooks with a spatula, cover and reserve dough
  16. Line a baking dish with parchment paper, or grease with cooking spray
  17. Spread flour over a clean working surface
  18. Shape dough into an even ball
  19. place on baking dish and gently pat to smooth the top
  20. If using, lay any decorations and press to stick
  21. Use a very sharp knife to cut an 1 inch deep “x” over the dough
  22. Bake, uncovered, for 20-25 minutes
  23. Quickly cover with lid or foil and return to oven
  24. Bake until golden-brown (another 20-25 min)
  25. Remove from oven and uncover immediately
  26. Loosen sides with a knife and let cool
  27. For ideal consistency, wait for at least 15 min before cutting
