Maple-Glazed Rainbow Carrots

1/3 cup Maple Syrup

4 tbsp Vegan Margarine

1/2 tbsp Garlic Powder

1 tsp Chili Powder

1 tsp Ground Mustard

2 lb Rainbow Carrots


Instructions

  1. Set oven to 400°f
  2. Line a baking sheet with a double layer of foil
  3. In a large bowl, add maple syrup, margarine, garlic powder, chili powder and ground mustard
  4. Mix with a whisk until well combined, but don’t worry about leaving some margarine lumps (we actually want that!) and set aside
  5. Wash the carrots well, if needed, and trim the ends – there’s no need to peel them
  6. Cut diagonally in 2-inch pieces, dividing the thicker ones in halves (or thirds) to guarantee even roasting (see recipe video for reference)
  7. Transfer carrots to the bowl and toss until well coated
  8. Spread over prepared baking sheet in a single layer, and pour the remaining glaze over them
  9. Roast until golden and tender (about 45-60 minutes) removing to toss and turn every 15-20 minutes
